🥘 Ingredients

4 oz. of grated bread, 4 oz. of currants, 4 oz. of apples, 2 oz. of sugar, 3 eggs, a few drops of essence of lemon, a little grated nutmeg.

👨‍🍳 Method

Pare, core, and mince the apples very finely, sufficient, when minced, to make 4 oz.; add to these the currants, which should be well washed, the grated bread, and sugar; whisk the eggs, beat these up with the remaining ingredients, and, when all is thoroughly mixed, put the pudding into a buttered basin, tie it down with a cloth, and boil for 3 hours.

A lesson in doing more with less

I tried my hand at Mrs. Beeton's "A Bachelor's Pudding" this week, and I must say, it was a delightful journey into Victorian simplicity. The method was surprisingly straightforward for a dish that requires three hours of simmering. I found the combination of tart apples, sweet currants, and the subtle warmth of nutmeg to be utterly charming. What surprised me was the texture — the grated bread created a surprisingly light and airy base, almost like a cross between a steamed sponge and a fruit cake. It was a revelation! This pudding is perfect for the modern comfort-seeker looking to slow down and enjoy the process. The long cooking time is an investment, but the result is a humble, rustic delight that warms the soul. I served mine with a dollop of clotted cream, and it was the perfect ending to a cozy evening. If you're up for a bit of old-fashioned patience, give this one a go.
