🥘 Ingredients

2 soles, 1/4 lb. of butter, egg, and bread crumbs, minced parsley, 1 glass of sherry, lemon-juice; cayenne and salt to taste.

👨‍🍳 Method

Clean, skin, and well wash the fish, and dry them thoroughly in a cloth. Brush them over with egg, sprinkle with bread crumbs mixed with a little minced parsley, lay them in a large flat baking-dish, white side uppermost; or if it will not hold the two soles, they may each be laid on a dish by itself; but they must not be put one on the top of the other. Melt the butter, and pour it over the whole, and bake for 20 minutes. Take a portion of the gravy that flows from the fish, add the wine, lemon-juice, and seasoning, give it one boil, skim, pour it _under_ the fish, and serve.

This one hit different

I tried this Baked Soles recipe this week, seeking comfort in its vintage simplicity. I found the process surprisingly soothing, the rhythm of preparing the fish and the gentle melting of butter creating a calming kitchen symphony. The real delight came when I poured the sherry- lemon mixture underneath the fish just before serving. It created a delicate, fragrant steam that infused the soles with a subtle, sophisticated flavor — a pleasant surprise from a recipe that felt so humble and homey. The resulting dish was a testament to the power of simplicity, perfect for a weeknight when I wanted to feel nourished and cared for. The fish was tender, the breadcrumbs added a lovely crunch, and the gravy tied it all together. This recipe is a gem for anyone seeking comfort in their cooking, a reminder that sometimes, less is truly more. I'll be keeping this one in my repertoire for those nights when I crave warmth and ease.
