🥘 Ingredients

Bacon; water. [Illustration: BOILED BACON.]

👨‍🍳 Method

As bacon is frequently excessively salt, let it be soaked in warm water for an hour or two previous to dressing it; then pare off the rusty parts, and scrape the under-side and rind as clean as possible. Put it into a saucepan of _cold_ water, let it come gradually to a boil, and as fast as the scum rises to the surface of the water, remove it. Let it simmer very gently until it is _thoroughly_ done; then take it up, strip off the skin, and sprinkle over the bacon a few bread raspings, and garnish with tufts of cauliflower or Brussels sprouts. When served alone, young and tender broad beans or green peas are the usual accompaniments.

A lesson in doing more with less

I tried this week's Boiled Bacon, and I must say, it was a revelation. I was expecting a mundane, overcooked slab of meat, but the gradual simmering process created something entirely different. The most delightful surprise was the texture — the bacon was tender and slightly firm, not the chewy or mushy mess I'd anticipated. It reminded me of a well-prepared sous-vide pork belly, but with a rustic charm. This recipe is perfect for the weeknight cook who wants to elevate simple ingredients. The process is straightforward, but it requires attention to detail — much like a good pasta al dente. The warm water soak and gradual heating are key to reducing saltiness and maintaining texture. I served mine with a side of broad beans, and it was a comforting, satisfying meal. Give it a try, and you might find yourself appreciating the humble bacon in a whole new light.
