⏱ Time
Nearly 4 hours

🥘 Ingredients

3/4 lb. of brown-bread crumbs, 1/2 lb. of currants, 1/2 lb. of suet, 1/4 lb. of moist sugar, 4 eggs, 2 tablespoonfuls of brandy, 2 tablespoonfuls of cream, grated nutmeg to taste.

👨‍🍳 Method

Grate 3/4 lb. of crumbs from a stale brown loaf; add to these the currants and suet, and be particular that the latter is finely chopped. Put in the remaining ingredients; beat the pudding well for a few minutes; put it into a buttered basin or mould; tie it down tightly, and boil for nearly 4 hours. Send sweet sauce to table with it.

Simple, sustaining, and surprisingly modern

This week, I journeyed back to 1861 to tackle Mrs. Beeton's Brown-Bread Pudding, a recipe that proved to be a delightful blend of nostalgia and comfort. I found the method surprisingly straightforward, despite the lengthy cooking time. The key to success, I discovered, lies in the preparation of the suet — finely chopped, it melts away in the mouth, creating a luxurious texture that elevates this humble pudding. I was particularly taken with the use of brandy, which infuses the pudding with a warm, aromatic note that pairs beautifully with the earthy brown bread and sweet currants. This recipe is perfect for the modern comfort-seeker looking to slow down and savor the process. The extended boiling time requires patience, but the result is a rich, aromatic pudding that warms the soul. I served it with a simple sweet sauce, as suggested, which cut through the pudding's density beautifully. The next time you find yourself with a stale loaf and a few hours to spare, give this vintage treat a try. You'll find it's a wonderful antidote to the fast-paced world we live in today.
