🥘 Ingredients

1/2 lb. of cold roast veal, a few slices of bacon, 1 pint of bread crumbs, 1/2 pint of good veal gravy, 1/2 teaspoonful of minced lemon-peel, 1 blade of pounded mace, cayenne and salt to taste, 4 eggs.

👨‍🍳 Method

Mince finely the veal and bacon; add the bread crumbs, gravy, and seasoning, and stir these ingredients well together. Beat up the eggs thoroughly; add these, mix the whole well together, put into a dish, and bake from 3/4 to 1 hour. When liked, a little good gravy may be served in a tureen as an accompaniment.

Simple, sustaining, and surprisingly modern

I tried Mrs Beeton's Chapter Xix this week, and I must say, it's a delightful journey into the Victorian kitchen. I was pleasantly surprised by the role of the breadcrumbs — not merely a binder, but a vehicle for the savoury flavours of bacon and veal to meld together. The minced lemon peel added a subtle brightness that cut through the richness, a clever touch that I found both surprising and delightful. The process of combining the ingredients is straightforward, but the end result is a comforting, savoury pudding that feels both hearty and elegant. This recipe would be a hit with the weeknight cook who wants to elevate leftovers into a substantial, satisfying meal. The baking time is reasonable, and the ingredients are likely to be in your pantry already. I served mine with a simple green salad, but a good dollop of mustard sauce would also be a modern, tangy accompaniment. Next time, I might try adding some chopped herbs for a touch more freshness. Either way, this is a recipe worth revisiting.
