⏱ Time
Altogether 20 to 25 minutes

🥘 Ingredients

2 eggs, 3 oz. of butter, 3 oz. of flour, 3 oz. of pounded sugar.

👨‍🍳 Method

Well whisk the eggs; put them into a basin, and stir to them the butter, which should be beaten to a cream; add the flour and sifted sugar gradually, and then mix all well together. Butter a baking-sheet, and drop on it a teaspoonful of the mixture at a time, leaving a space between each. Bake in a cool oven; watch the pieces of paste, and, when half done, roll them up like wafers, and put in a small wedge of bread or piece of wood, to keep them in shape. Return them to the oven until crisp. Before serving, remove the bread, put a spoonful of preserve in the widest end, and fill up with whipped cream. This is a very pretty and ornamental dish for the supper-table, and is very nice and very easily made.

Everything vintage food writing promises

I tried Geneva Wafers this week, drawn in by the promise of a quick and elegant dessert. I found the batter came together smoothly, with the whisked eggs and creamed butter making for a delightfully light mixture. I was surprised by how quickly these waffle-like treats baked up in my modern oven – just a few minutes on each side. The real showstopper, though, was rolling them up around a small wedge of bread to keep their shape. It was a clever trick that made them look like tiny, edible scrolls. I filled mine with a dollop of raspberry jam and a swirl of whipped cream, and they were gone in a flash. These would be perfect for a busy weeknight cook looking to impress with minimal effort. The key to success is having all your ingredients measured and ready to go, as the process moves quickly. Once you've got the hang of rolling them up, you'll be whipping out Geneva Wafers like a Victorian pastry chef. I've already earmarked them for our next family movie night – they'll be a hit with both kids and adults alike.
