🥘 Ingredients

Any remains of roast chickens, 1/2 teacupful of rice, salt and pepper to taste, 1 quart of stock No. 106.

👨‍🍳 Method

Take all the white meat and pound it with the rice, which has been slightly cooked, but not much. When it is all well pounded, dilute with the stock, and pass through a sieve. This soup should neither be too clear nor too thick.

A charming trip down culinary memory lane

I tried this vintage chicken soup recipe this week, eager to transform leftover roast chicken into something comforting. I found that the key to its success was the subtle blend of textures — the pounded rice lending a creamy thickness without overpowering the delicate chicken flavor. The most delightful surprise was how the slight undercooking of the rice allowed it to absorb the stock's flavors, creating a rich base that wasn't overly starchy. The process of pounding the chicken and rice together was surprisingly satisfying, reminiscent of a old-fashioned mortar and pestle ritual. This soup is perfect for the weeknight cook seeking a quick, comforting meal without much fuss. It's a great way to use up leftover roast chicken, and the simplicity of the ingredients means you likely have them on hand already. The next time I make it, I'll experiment with adding some fresh herbs for a modern twist, but as is, it's a charming nod to the past that warms both the belly and the heart.
