🥘 Ingredients

Sheep kidneys, pepper and salt to taste.

👨‍🍳 Method

Ascertain that the kidneys are fresh, and cut them open very evenly, lengthwise, down to the root, for should one half be thicker than the other, one would be underdone whilst the other would be dried, but do not separate them; skin them, and pass a skewer under the white part of each half to keep them flat, and broil over a nice clear fire, placing the inside downwards; turn them when done enough on one side, and cook them on the other. Remove the skewers, place the kidneys on a very hot dish, season with pepper and salt, and put a tiny piece of butter in the middle of each; serve very hot and quickly, and send very hot plates to table.

A lesson in doing more with less

I tried Mrs. Beeton's simple sheep kidney recipe, intrigued by its minimalist approach. I found the technique of skewering the kidneys to keep them flat was sheer genius; it ensured even cooking and presented a tidy, appetizing shape. The method was delightfully straightforward, relying on the skill of the cook to judge doneness and the quality of the ingredients to shine through. This recipe is perfect for the weeknight cook who appreciates a quick, technique-focused dish. The key to success lies in the freshness of the kidneys and the precision of the cut. I served mine with a simple green salad and some crusty bread, enjoying the rich, slightly gamy flavor that was perfectly complemented by the hot, melted butter in the center. Next time, I might experiment with a quick pan sauce to add some acidity, but as it stands, this recipe is a solid entry in the offal enthusiast's repertoire.
