⏱ Time
About 10 minutes to fry the mixture

🥘 Ingredients

6 eggs, a few slices of citron, sugar to taste, 1/4 pint of cream, a layer of any kind of jam.

👨‍🍳 Method

Beat the whites and yolks of the eggs separately; then mix them and beat well again, adding a few thin slices of citron, the cream, and sufficient pounded sugar to sweeten it nicely. When the mixture is well beaten, put it into a buttered pan, and fry the same as a pancake; but it should be three times the thickness of an ordinary pancake. Cover it with jam, and garnish with slices of citron and holly-leaves. This dish is served cold.

Simple, sustaining, and surprisingly modern

I tried my hand at Mrs Beeton's The Hidden Mountain, a Victorian dish that felt like a cross between a Dutch baby pancake and a fruit tart. I found the process surprisingly straightforward, despite the antiquated instructions. The real delight came from the citrus notes — the thin slices of citron infused the batter with a subtle, aromatic flavour that I didn't expect from a 19th-century recipe. This dish would be a hit with anyone looking to impress at a afternoon tea or brunch with a vintage twist. The thick, custardy pancake, chilled and topped with jam and candied citron, was a delightful surprise. It's not a dish for the hurried weeknight cook, but for those with a bit of time and a love for nostalgia, it's a charming way to end a meal. I served mine with a dusting of powdered sugar for a touch of elegance.
