⏱ Time
From 15 to 20 minutes to simmer the apricots

🥘 Ingredients

1/2 pint of syrup No. 1512, 12 green apricots.

👨‍🍳 Method

Make the syrup by recipe No. 1512, and when it is ready, put in the apricots whilst the syrup is boiling. Simmer them very gently until tender, taking care not to let them break; take them out carefully, arrange them on a glass dish, let the syrup cool a little, pour it over the apricots, and, when cold, serve.

A lesson in doing more with less

I tried my hand at Mrs. Beeton's Compote of Apricots this week, and I must say, it was a delightful journey back in time. I found the process of making the syrup to be a charming exercise in patience. The apricots, I discovered, are far easier to find in season, but I used dried apricots instead and rehydrated them overnight. This small detail made a world of difference in the final texture, resulting in a more delicate and tender fruit. I was surprised by how quickly the apricots softened in the syrup, but I suppose that's the magic of simple sugars and gentle heat. This recipe is perfect for the vintage enthusiast or the home cook looking to experiment with old techniques. The key to success lies in the gentle simmering, which preserves the apricots' shape and infuses them with the syrup's sweetness. Serve this compote chilled, and you'll have a refreshing dessert that's as pleasing to the eye as it is to the palate. I paired mine with a dollop of Greek yogurt for a modern twist, and it was a match made in heaven.
