🥘 Ingredients

Cucumbers, salt.

👨‍🍳 Method

Pare and slice the cucumbers (as for the table), sprinkle well with salt, and let them remain for 24 hours; strain off the liquor, pack in jars, a thick layer of cucumbers and salt alternately; tie down closely, and, when wanted for use, take out the quantity required. Now wash them well in fresh water, and dress as usual with pepper, vinegar, and oil. [Illustration: THE CUCUMBER.] THE CUCUMBER.--Though the melon is far superior in point of flavour to this fruit, yet it is allied to the cucumber, which is known to naturalists as _Cucumia sativus_. The modern Egyptians, as did their forefathers, still eat it, and others of its class. Cucumbers were observed, too, by Bishop Heber, beyond the Ganges, in India; and Burckhardt noticed them in Palestine. (See No. 127.) AN EXCELLENT WAY OF PRESERVING CUCUMBERS.

Old-fashioned cooking done right

I tried this German method of keeping cucumbers, drawn from Mrs. Beeton's classic tome, and I must say, it's a marvel of simplicity. The process is delightfully uncomplicated: pare, slice, salt, and wait. The next day, you strain and pack them away, ready for a winter's day when fresh produce is a distant memory. I found the resulting cucumbers to be remarkably crisp and clean-tasting, a testament to the power of salt in drawing out impurities. The one detail that surprised me was the sheer amount of liquid the cucumbers released—it was astonishing, like a tiny cucumber rainstorm in my kitchen. This recipe is a gem for the weeknight cook who wants to put up a bit of the season's bounty without fuss. It's a classic technique that's stood the test of time, and it's easy to see why. The cucumbers keep beautifully, and when dressed with a touch of vinegar and oil, they're a refreshing addition to any meal. I can see myself making this a regular part of my preserving routine—it's just so satisfying to open a jar of these briny gems on a cold winter's evening.
