2 hours

🥘 Ingredients

1/2 lemon, lump sugar to taste, 1 pint of boiling water.

👨‍🍳 Method

Pare off the rind of the lemon thinly; cut the lemon into 2 or 3 thick slices, and remove as much as possible of the white outside pith, and all the pips. Put the slices of lemon, the peel, and lump sugar into a jug; pour over the boiling water; cover it closely, and in 2 hours it will be fit to drink. It should either be strained or poured off from the sediment.

A heritage recipe worth resurrecting

I tried Mrs. Beeton's Lemonade for Invalids this week, and I must say, the name is a mouthful but the drink itself is surprisingly delightful. I was intrigued by the instruction to pare off the rind thinly and remove the pith — it's a technique I've never considered for lemonade. The resulting beverage is incredibly subtle and refreshing, with a delicate lemon flavor that doesn't punch you in the face like some modern recipes. I found the process of letting it steep for two hours to be quite meditative, and the final product was a soothing elixir that I could see myself sipping on a hot day or when under the weather. This lemonade is perfect for the modern comfort-seeker looking to unwind. I recommend trying it as is, but if you're feeling adventurous, a splash of sparkling water or a touch of honey can elevate it further. Next time, I might even try adding a sprig of fresh mint or a slice of cucumber for a twist on this classic recipe. One thing is for sure: this lemonade is a gentle reminder that sometimes, less is more.
