4 eggs, 1 pint of milk, 1-1/4 oz. of loaf sugar, 3 tablespoonfuls of flour.

Quiet elegance from another century

I tried Mrs. Beeton's Orange Batter Pudding this week, drawn to its simplicity and the promise of a fruity surprise. The batter came together smoothly with just eggs, milk, sugar, and flour—a delightful testament to the power of basic ingredients. I found that the pudding took a bit longer to set than expected, but the wait was worth it. The true revelation came when I unveiled the pudding, its top glistening with a generous layer of orange marmalade. The marmalade, heated through, created a delightful, sticky topping that was a wonderful contrast to the soft, custardy base. It was a pleasant surprise, as the recipe does not specify the quantity of marmalade to use. I used about half a small jar, but next time, I'll use even more. This pudding is perfect for the weeknight cook looking to impress with minimal effort. The hands-on time is incredibly short, and the use of pantry staples makes it an excellent choice for impromptu desserts. The combination of the warm, comforting pudding and the bright, tangy marmalade is a match made in heaven. I served it with a dollop of Greek yogurt to balance the sweetness. It was a hit with my family, and I'm already looking forward to making it again.
