⏱ Time

🍽 Serves
1/2 lb

🥘 Ingredients

Puff-paste, jam of any kind, the white of an egg, sifted sugar.

👨‍🍳 Method

Roll the paste out thin; put half of it on a baking-sheet or tin, and spread equally over it apricot, greengage, or any preserve that may be preferred. Lay over this preserve another thin paste; press the edges together all round; and mark the paste in lines with a knife on the surface, to show where to cut it when baked. Bake from 20 minutes to 1/2 hour; and, a short time before being done, take the pastry out of the oven, brush it over with the white of an egg, sift over pounded sugar, and put it back in the oven to colour. When cold, cut it into strips; pile these on a dish pyramidically, and serve. These strips, cut about 2 inches long, piled in circular rows, and a plateful of flavoured whipped cream poured in the middle, make a very pretty dish.

This one hit different

I tried the Pastry Sandwiches from Mrs Beeton this week, and it was like taking a comforting step back in time. The process was straightforward, and I found the puff-paste rolled out beautifully thin, creating a delicate crunch when baked. The real delight came when I brushed the egg white and sprinkled the sugar just before the pastries were done. The sugar melted and caramelized in spots, giving the pastries a lovely, slightly golden sheen that added a touch of elegance. The finished pastries were a hit with my family. We enjoyed them plain, but I can see how they would be perfect with a dollop of whipped cream in the center, as suggested. This recipe is ideal for anyone seeking comfort and warmth in their cooking. The pastries are best enjoyed fresh from the oven, so plan to bake them when you have time to savor the process and the result.
