⏱ Time
15 minutes to fry the patties

🥘 Ingredients

Cold roast veal, a few slices of cold ham, 1 egg boiled hard, pounded mace, pepper and salt to taste, gravy, cream, 1 teaspoonful of minced lemon-peel, good puff-paste.

👨‍🍳 Method

Mince a little cold veal and ham, allowing one-third ham to two-thirds veal; add an egg boiled hard and chopped, and a seasoning of pounded mace, salt, pepper, and lemon-peel; moisten with a little gravy and cream. Make a good puff-paste; roll rather thin, and cut it into round or square pieces; put the mince between two of them, pinch the edges to keep in the gravy, and fry a light brown. They may be also baked in patty-pans: in that case, they should be brushed over with the yolk of an egg before they are put in the oven. To make a variety, oysters may be substituted for the ham.

Simple, sustaining, and surprisingly modern

I tried my hand at Mrs. Beeton's cold veal and ham patties this week, and I must say, the result was a delightful blast from the past. The combination of minced cold roast veal and ham, bound together with a creamy, lemon-infused gravy, was surprisingly refreshing. I found that the puff-paste encasing the mixture added a delightful crunch that contrasted beautifully with the tender filling. The lemon-peel was a brilliant touch; it added a bright, zesty note that cut through the richness of the veal and ham, elevating the patties from mere leftovers to a charming repast. This recipe would be a hit with any weeknight cook looking to elevate their meal prep game. The use of leftovers is ingenious, and the addition of puff-paste makes it feel special enough for a weeknight treat. I was particularly delighted by the ease of frying the patties to a light brown crispness; it was a quick and satisfying process. For those who enjoy a taste of history in their modern kitchen, this recipe is a charming and delicious way to connect with the past. If you're looking for a quick and elegant way to use up leftovers, give these patties a try.
