Cut a few slices from a cold fillet of veal 1/2 inch thick; rub them over with egg; lay a thin slice of fat bacon over each piece of veal; brush these with the egg, and over this spread the forcemeat thinly; roll up each piece tightly, egg and bread crumb them, and fry them a rich brown. A lesson in doing more with less

I tried this recipe out of sheer curiosity, and I must admit, the technique was surprisingly satisfying. I found that the key to success was getting the rolls tight and neat before breading them. The forcemeat, a simple mixture of ground pork and herbs, added a delightful texture and depth of flavor that I didn't expect from such an old recipe. The real revelation was how the bacon melted and combined with the veal, creating a tender, juicy center that was a joy to bite into. I had no mushrooms on hand, so I whipped up a quick brown gravy to serve alongside, and it paired beautifully with the richness of the veal rolls. This dish would be a hit with anyone who enjoys a bit of culinary nostalgia and isn't afraid to get hands-on in the kitchen. The technique is simple enough for a weeknight cook but special enough for a dinner party. The next time I have leftover roast meat, I'll definitely be reaching for this recipe again. It's a testament to Mrs. Beeton's enduring wisdom that this old recipe can still shine in a modern kitchen.
