⏱ Time
About 2 hours to soak the cake

🥘 Ingredients

1 moulded sponge-or Savoy-cake, sufficient sweet wine or sherry to soak it, 6 tablespoonfuls of brandy, 2 oz. of sweet almonds, 1 pint of rich custard. [Illustration: TIPSY CAKE.]

👨‍🍳 Method

Procure a cake that is three or four days old,--either sponge, Savoy, or rice answering for the purpose of a tipsy cake. Cut the bottom of the cake level, to make it stand firm in the dish; make a small hole in the centre, and pour in and over the cake sufficient sweet wine or sherry, mixed with the above proportion of brandy, to soak it nicely. When the cake is well soaked, blanch and cut the almonds into strips, stick them all over the cake, and pour round it a good custard, made by recipe No. 1423, allowing 8 eggs instead of 5 to the pint of milk. The cakes are sometimes crumbled and soaked, and a whipped cream heaped over them, the same as for trifles.

Everything vintage food writing promises

I tried this Tipsy Cake recipe when I found an old sponge cake languishing in my pantry, and I must say, it was a delightful way to repurpose it. The process of soaking the cake in a generous mix of sherry and brandy was oddly satisfying, like giving the cake a much-needed pick-me-up. I found that the almonds, once blanched and sliced, added a nice crunch and a touch of elegance to the otherwise humble cake. The custard, rich and velvety, tied the whole dish together beautifully. What surprised me was how the flavors melded together over the soaking time—it was like the cake was having a little party in the fridge. This recipe is perfect for the weeknight cook who wants to impress without spending hours in the kitchen. The prep work is minimal, and the result is a decadent, adult-friendly dessert that feels special. I served it to my family after a long day, and it was a hit. The tipsy cake is a wonderful way to elevate a simple sponge cake into something extraordinary. If you have a few hours to spare, give it a try—you won't be disappointed.
