🥘 Ingredients

8 good sized apples, 3 oz. of butter, the rind of 1/2 lemon minced very fine, 6 oz. of rice, 1-1/2 pint of milk, sugar to taste, 1/2 teaspoonful of grated nutmeg, 6 tablespoonfuls of apricot jam.

👨‍🍳 Method

Peel the apples, halve them, and take out the cores; put them into a stewpan with the butter, and strew sufficient sifted sugar over to sweeten them nicely, and add the minced lemon-peel. Stew the apples very gently until tender, taking care they do not break. Boil the rice, with the milk, sugar, and nutmeg, until soft, and, when thoroughly done, dish it, piled high in the centre; arrange the apples on it, warm the apricot jam, pour it over the whole, and serve hot.

A heritage recipe worth resurrecting

I tried this recipe last night, seeking a comforting, slightly unusual dessert to wrap up a chilly evening. I found that the combination of apples and rice created a unique, creamy base that was reminiscent of a cross between rice pudding and apple crisp. It was delightfully homey, but with an unexpected twist. What surprised me was how the apricot jam glaze brought everything together. I thought it might be too sweet or artificial-tasting, but it actually added a lovely, tangy note that cut through the richness of the dish. I think this would be a great option for a weeknight cook looking to impress with minimal effort. The recipe is straightforward, and the results are warm, comforting, and just a bit whimsical. Next time, I might try it with a scoop of vanilla ice cream on the side for added decadence.
