🥘 Ingredients

To each 1/2 gallon of water, allow 1 heaped tablespoonful of salt; beans. [Illustration: BROAD BEAN.]

👨‍🍳 Method

This is a favourite vegetable with many persons, but to be nice, should be young and freshly gathered. After shelling the beans, put them into _boiling_ water, salted in the above proportion, and let them boil rapidly until tender. Drain them well in a colander; dish, and serve with them separately a tureen of parsley and butter. Boiled bacon should always accompany this vegetable, but the beans should be cooked separately. It is usually served with the beans laid round, and the parsley and butter in a tureen. Beans also make an excellent garnish to a ham, and when used for this purpose, if very old, should have their skins removed.

Quiet elegance from another century

I tried my hand at boiled broad beans this week, and I must say, this recipe from Mrs. Beeton was a delightful trip down the culinary lane. I found that the key to success was indeed using fresh, young beans, as the recipe suggests. The method was refreshingly straightforward: a swift boil in salted water until tender, then drained and served with a side of parsley and butter. I was surprised by how much I enjoyed the simplicity of the dish. The beans were tender and slightly sweet, and the parsley and butter added a bright, savory note that elevated the humble legume to something quite special. This recipe is perfect for the weeknight cook looking to elevate their meal without breaking the bank. The boiled bacon was a delightful accompaniment, adding a smoky depth that paired beautifully with the beans. I served them with some crusty bread to soak up the parsley and butter, and it was a meal that felt both comforting and slightly fancy. If you're looking for a budget-friendly way to impress, give this one a try. Just remember, fresh beans make all the difference.
