⏱ Time
3/4 to 1 hour, or longer if the oven is very slow

🥘 Ingredients

1-1/2 pint of milk, 3 tablespoonfuls of sago, the rind of 1/2 lemon, 3 oz. of sugar, 4 eggs, 1-1/2 oz. of butter, grated nutmeg, puff-paste.

👨‍🍳 Method

Put the milk and lemon-rind into a stewpan, place it by the side of the fire, and let it remain until the milk is well flavoured with the lemon; then strain it, mix with it the sago and sugar, and simmer gently for about 15 minutes. Let the mixture cool a little, and stir to it the eggs, which should be well beaten, and the butter. Line the edges of a pie-dish with puff-paste, pour in the pudding, grate a little nutmeg over the top, and bake from 3/4 to 1 hour.

Simple, sustaining, and surprisingly modern

I tried this Sago Pudding recipe from Mrs. Beeton, and I must say, it was a delightful trip back to the Victorian era. The process of infusing the milk with lemon rind was simple yet effective, and I found that the lemon flavour really shone through, even after the rind was removed. The sago cooked beautifully, absorbing the milk and sugar to create a thick, creamy mixture that was surprisingly satisfying. The real surprise came when I grated the nutmeg over the top before baking. The warm, aromatic scent filled my kitchen, transporting me to a bygone era. This pudding would be a hit with anyone seeking a comforting, old-fashioned dessert. The combination of custardy filling and flaky puff-paste crust is sure to please. I served it warm, straight from the oven, and it was the perfect end to a hearty meal. Give it a try if you're a comfort-seeker looking to add a touch of vintage charm to your dinner table.
