🥘 Ingredients

A few thin slices of cold boiled beef; butter, cabbage, 1 sliced onion, pepper and salt to taste.

👨‍🍳 Method

Fry the slices of beef gently in a little butter, taking care not to dry them up. Lay them on a flat dish, and cover with fried greens. The greens may be prepared from cabbage sprouts or green savoys. They should be boiled till tender, well drained, minced, and placed, till quite hot, in a frying-pan, with butter, a sliced onion, and seasoning of pepper and salt. When the onion is done, it is ready to serve.

A lesson in doing more with less

I tried the cabbage greens of Mrs Beeton’s beef and cabbage recipe and I must say, I was delighted by the simplicity and the technique. I tried boiling the greens first instead of sautéing them raw, and I found the result to be incredibly tender. The trick, I discovered, was to drain them thoroughly before adding them to the frying pan with the butter, onions, and seasoning. The onions became translucent and sweet, and the cabbage took on a wonderful nutty flavor from the butter. I was surprised by how much the humble cabbage could shine with just a little bit of attention. This dish is perfect for the weeknight cook who wants to elevate simple ingredients. The technique of boiling and then frying the cabbage gives it a depth of flavor that's unexpected. I served the beef sliced thinly, and it was delightfully tender and full of flavor from the butter. Next time, I'll try it with some leftover roast beef — I think the flavor will be even more intense. The whole dish took less than half an hour, just as promised, and it was a satisfying and comforting meal.
