Bread recipes use rise, proof and rest for related pauses, but the dough is not doing exactly the same job in each one. The words are less important than knowing whether fermentation, gluten relaxation or temperature equalisation is the purpose.
Bulk fermentation develops the whole dough
After mixing, the dough ferments before final shaping. Yeast produces gas and flavour compounds while gluten is strengthened through time and folds. Volume is only one signal; dough temperature, elasticity, bubbles and the recipe's flour all affect when bulk fermentation is complete.
Final proof follows shaping
The shaped loaf rises again before baking. Underproofed dough can tear unpredictably and feel dense; overproofed dough may lose the strength to expand in the oven. A finger test is useful only with context because enriched, wet and sourdough loaves recover differently.
A rest may not be a rise
Bench rest lets divided dough relax before shaping. Autolyse hydrates flour before later mixing. Chilling can slow fermentation, firm butter or make sticky dough easier to handle. Calling every pause a “proof” hides why it is there.
Use the clock as a record, not the sole judge
A stated time assumes a dough and room temperature. Watch the physical cues named by the recipe and record your conditions; the same dough can move much faster in a warm kitchen.
